When sewing in jersey, using an overlock machine is the most common method. It joins the pieces with an elastic seam, while overcasting and trimming the edges at the same time. It uses a whole lot of thread compared to hand-stitching, but, as often is the case, is much, much faster.
My overlock is a vintage industrial one, but still works like a charm! And have done so, for about 20 years or so.
